rising biscuits

adapted from Thomas Keller’s ad hoc.
2 C of AP flour
2 Cups of Cake flour
1 TBS kkosher salt
1 TBS Baking Powder
1-1/2 tsp Baking soda
1 pinch of cayenne
2 TBS honey
mix dry ingredients in a food processor. Add cold butter and blend to pea sized chunks
Pour into a large bowl and make a well in the middle. Pour in buttermilk. Work buttermilk into the dry ingredients. just after it comes together, dump onto clean work surface.
Bring dough together into shaggy mass.
break into 12 parts,, brush with more buttermilk.
bake in 425dgree oven for 18-20 minutes
