glossy chocolate setting on a chocolate mint shortbread. This was an attempt to try a bitter chocolate (63%) poured from a bowl. The initial glaze was a bit heavy (next time Ill be trying fork and dip method) but the audience didnt have any issue. My initial mint offering, though, was a little on the low side. My main tester required "much more, maybe even double it". So the next round i will increase to 0.6% (~2 Tbsp) peppermint mint extract, up from 0.4% (~4 tsp)
