adapted from Thomas Keller’s ad hoc.

  • 2 C of AP flour

  • 2 Cups of Cake flour

  • 1 TBS kkosher salt

  • 1 TBS Baking Powder

  • 1-1/2 tsp Baking soda

  • 1 pinch of cayenne

  • 2 TBS honey

  • mix dry ingredients in a food processor. Add cold butter and blend to pea sized chunks

  • Pour into a large bowl and make a well in the middle. Pour in buttermilk. Work buttermilk into the dry ingredients. just after it comes together, dump onto clean work surface.

  • Bring dough together into shaggy mass.

  • break into 12 parts,, brush with more buttermilk.

  • bake in 425dgree oven for 18-20 minutes
